Cumpanio Get’s A New Chef

The third post in a series of five on what's new in SMA... A new chef at Cumpanio brings her many years of experience from Panio, one of the best bakeries in the city. We are delighted to announce that the very talented chef and friend, Ana Martinez, will now head up the kitchen at Cumpanio. Cumpanio was the first restaurant that Alberto Laposse introduced in 2011 having contemporary design and cuisine. Back then, there were very few options in SMA. Many of the dishes she cooked for us were from her new summer menu and they were nothing short of amazing. Not only is the flavorful Gazpacho the best in SMA but the crust on the pizzas have changed and are now made from their own Masa Madre. The Bacon and caramelized onion pizza was a favorite; using the best ingredients to achieve bold and memorable flavors. Our feast started out with the Gazpacho made from tomatoes and cucumbers/ $180 pesos; Gnocchis with a light tomato sauce/ $260 pesos; Beef carpaccio, arugula, parmesan cheese, capers with a sourdough bread/ $220 pesos; Smoked salmon toast with stracchinella cheese/ $200 pesos; and finally the Bacon, caramelized onion, mozzarella cheese and arugula pizza/ $280 pesos. We also like to have breakfast at Cumpanio and sit at our favorite table - the one with the “throne” in front of the big windows where half of SMA walks by before you ever get your second cup of coffee. Ana began her career at the Private Residence of the owner of Hotel Matilda, and then joined the Moxi team led by Chef Enrique Olvera. In 2016 she joined Levain and Co team for the opening of Panio Relox. In 2018 she took on a new position at Panio Atelier to become Head of Production in the kitchen, from where she supervised kitchen operations and ensured the quality of our preserves, special dishes and savory salty pastries. Ana was just appointed Chef at Cumpanio SMA, a role in which she will continue to drive innovation, efficiency and lead the kitchen team with the same passion and dedication that has characterized Levain and Co. We might also add that she’s one of the nicest people we know. Exciting things are coming this fall when Cumpanio will open a new, outdoor terrace; part of a hotel being built near the property. And because we never dreamed that there was room for anything, much less an outside terrace in that block, we’re pushing for a celebratory inauguration when it opens. Stay tuned.
