Some things are best repeated every week. Chef Arturo Sandoval is one of them.

The Menu:
The salad: a mix of baby lettuce, Figs, sunflower seeds, feta cheese and a cognac reduction. $190 pesos.
A pan of grilled Chorizo; perhaps the best Chorizo we’ve ever eaten. $150 pesos.
Cecina stuffed with suckling pig; a most creative taco using Cecina as the shell. $290 pesos.
Causa de Atun: Cause Limena wrapped in Tuna and Rock Shrimp. A typical entrée of Peruvian gastronomy, this version was made with yellow potato. Chef Sandoval is an expert in Peruvian-Japanese style cooking. $180 pesos
Booth One:
Like the Pump Room in Chicago, Aquila has a Booth One to the right of the entrance. Reserve it and you’ll not only feel like a VIP with a view of the whole place but it’s also the booth that’s located in the shade.
