Daydreams and Daiquiris


I was flipping through an old issue of Islands magazine and suddenly wanted to have a cold Daiquiri while I was sweating profusely in the 90 degree sun.
Just then, something made me look out my window and I saw a foot of snow.
Back to reality.
It’s that kind of day...cold, rainy and a good day to stay in and daydream about being someplace else so I had my Daiquiri anyway.
Did you know that this was Hemingway’s favorite drink at the Floridita bar in Havana?
Back to my daydreams because the sunshine just can’t come soon enough.

Crushed ice
2 oz. (1/4 c.) white rum
1 oz. (1/8 c.) freshly squeezed lime juice
1 oz. (1/8 c.) simple syrup (see below)
Lime slice for garnish

Fill a cocktail shaker with crushed ice, pour in the rum, lime juice and simple syrup, and shake vigorously. 
Strain into a chilled martini or wide-mouth cocktail glass and serve garnished with a lime slice.
To make simple syrup: Blend together 1/4 cup warm water with 1/4 cup finely granulated sugar, and stir until dissolved. Store in a sealed jar.
