Honey Lemon Muffins
I’m really not a muffin person but I really like this recipe that comes from my friend Gina. It’s very light and a perfect side to serve with a spring salad.
I also doubled the drizzle on this because I like lot on mine. Always a sucker for the sweet stuff!
Serves 10.

Honey Lemon Muffins
1 c. all purpose flour
1/2 c. whole wheat flour
1 tsp baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 egg
1/2 c. honey
1/4 c. lemon juice
1/4 c. light stick butter, melted
1/2 tsp. grated lemon peel
Drizzle:
1/2 c. powdered sugar
lemon juice
additional grated lemon peel
In a large bowl, combine flours, baking powder, baking soda and salt. In another bowl, combine the egg, honey, lemon juice, butter and lemon peel. Stir into dry ingredients until moistened.
Coat muffin cups with cooking spray. Fill half full. Bake at 375 for 15-18 minutes. Cool for 5 minutes before removing from pan.
In a small bowl, combine powdered sugar, lemon juice and lemon peel until drizzling consistency. Drizzle over muffins.
