The Leftover Challenge

My neighbor brought over some of her leftovers from the week to see if I could turn them into something appealing for her Super Bowl Party. Here is what I added to her containers to make new and appetizing dishes. Be creative. You’ll be amazed at what tastes good together.

To her large container of Bow Tie Pasta:
I combined the pasta with sun dried tomatoes, Asparagus, Feta Cheese, spices and an Italian Dressing to make a cold pasta salad. Chill at least 2 hours to allow flavors to blend.

To her 6 cups of overly spiced chili:
To lighten it up a little, I mixed in a pound of ground chicken that I sautéed on the stove with a small can of tomatoes. She had enough beans and spice in the six cups she gave me so I didn’t add any more of those ingredients to the mix. It was really good with the ground chicken added. I really never thought to mix beef and chicken until I did this. We’ll top with cheese, onions and a dop of sour cream with sliced avocado.

To her container of wild rice:
I added chopped oranges, pecans and dried cranberries to make a great, cold wild rice salad.

To her Prime Rib:
The Prime Rib has such a great taste and she had cooked it perfectly. I shredded it up and added a homemade BBQ sauce (like I do with my pulled pork). Serve on tiny buns with homemade pickles.
